If you have never made a Christmas cake before don’t take fright at all the different ingredients as it’s really a straight forward recipe. The hardest bit is lining the cake tin with paper beforehand!
Before baking, prepare your cake tin by lining the bottom and sides with brown paper. Take the paper about 2 inches above the sides of the cake tin. This helps keep the moisture inside the cake. On top of the brown paper line the cake tin with greaseproof paper which has been greased with margarine or butter. Again bring it about 2 inches above the side of the cake tin.
This recipe is cooked at two temperatures. Cooking at a slightly higher temperature for the first 1 ½ hours makes the outside crunchy and the inside lovely and moist.

Mix the flour, cinnamon, spice and salt together.
Beat the eggs with the sherry or brandy.
Cream together the eggs, sugar, butter and treacle.
Add the creamed egg mix into the flour mix.
Add all the other ingredients and mix well.
Pour into a cake tin and bake in the oven for 1 ½ hours.
Turn down the heat and bake for a further 2 hours.
Allow the xmas cake recipe to cool completely on a wire rack.
Wrap in foil and store in an airtight container.
Spread the jam thinly over the top and sides of the cake.
Mix the sugar and almonds together in a bowl.
Next mix the eggs into the sugar and almond mix.
Beat the mix well until it is stiff.
Taking a rolling pin, roll the paste out until it’s the size of the cake top.
Place the paste on top of the cake and trim any excess round the edges.
Leave for 2 days to firm before icing.
Beat the egg whites, glycerine and half icing sugar until they are smooth. Beat the rest of the icing sugar into the mix.
Spread half the icing over the top of the cake and leave for an hour or two to harden.
Once the icing is hard trim off the excess.
Now cover the sides of the cake with the rest of the royal icing.
Finish your xmas cake recipe off with a little sprig of holly for decoration.
