Itís a perfect meal if time or money is short. Pasta can be bought on a tight budget and takes only minutes to cook. Just add a few vegetables or fruits and a little olive oil and you have a meal thatís worth eating, and full of goodness and energy.

Summer Pasta Salads

Noodles peach and pineapple salad

suitable for vegetarians

This is a lovely dish for supper on a summer's evening or a hot summer's day at lunch time. Because it's served cold it makes an ideal picnic dish.

Serves 4
  • 275g dried noodles
  • 1 tin of pineapple rings
  • 3tbls lime juice
  • 3tbls brown sugar
  • 4tbls coconut milk
  • 2tbls fish sauce
  • 2tbls grated root ginger
  • 2 chopped garlic cloves
  • 1 mango
  • 2 peaches
  • 2 spring onions
  • 2 red chillies
  • pepper
Method
Following the directions on the packet, place the noodles into boiling water to cook. .
Once the noodles are cooked, drain the water away by using a sieve.
With the noodles in the sieve, pour cold water from the tap over them.
Allow to cool.

Cut the pineapple rings into cubes.
Cut the mango, peaches, spring onions and red chillies into small pieces.
Mix the lime juice, fish sauce, brown sugar and coconut milk in a salad bowl.
Add the garlic and ginger and mix well.
Pepper to taste.

Add the noodles, pineapple, mango, peaches and spring onions to the sauce.

Summer Pasta Salads

Salmon Pasta Salad

Serves 4
  • 100g wholewheat fusilli
  • 1tbls olive oil
  • salt
  • 1tbls chopped parsley
  • 100g green beans halved
  • Ĺ onion sliced
  • 1 green chopped chilli
  • juice of 1 lime
  • 25g chopped fresh coriander
  • 100g salmon sliced - cooked
Method
Cook the pasta in boiling water, according to the instructions on the packet.
Once cooked, drain them using a sieve and then run them under the cold water tap.
Before they cool completely, pour the olive oil and a little salt for taste and the parsley over the pasta and toss. Put to the side.

Cook the green beans for about 3 minutes.
Once cooked, drain using a sieve and hold under the a running cold water tap.

Add the coolled green beans to the cooled pasta.
Now add the onion, chilli, lime juice, salmon and chopped coriander.
Season with salt and pepper to taste and serve.
