It surprised me when I found this spinach cheese quiche recipe in an old recipe book as spinach used to be thought of as one of those foods you should avoid eating at all cost.
Happily we don't think that way about spinach anymore which is a good thing as it contains so many vitamins and is loaded with iron. It is a great food for everyone especially those needing extra energy such as athletes, expectant mums and people recovering from illness.
People often associate spinach with Popeye. Popeye was a cartoon character who, when he ate spinach, became incredibly strong. There is some truth in this although its doubtful if you will grow as strong as Popeye even eating loads of spinach! Full of vitamin C, vitamin A, calcium, potassium and iron, it's a very healthy choice.
Why not pack a few pieces of our spinach cheese quiche recipe into your lunch box? An excellent choice for a lunch time snack which is not only tasty but very filling. Picnics are also an ideal time to serve quiche, perfect with a glass of white wine. Another great way to have quiche is serving salad alongside it - very appetising and colourful: in fact raw spinach is perfect to include in a salad as it has a nice sharp taste which isn't too strong.
Children love quiche and they love finger food which can be eaten as they go along. The combination is a great choice for parents who can't get their kids to eat good food. It's also very filling and will keep them going until the next meal.
Fresh spinach can be bought all year round, the leaves should be green and springy. If the leaves feel soft and lifeless, go and shop around. Stored in the fridge it will keep fresh for 1-2 days. Frozen spinach can also be bought but it's poor in taste compared to the fresh variety for our spinach cheese quiche recipe.
Wash under the cold water tap. Remove any tough stalks. Quick and easy to cook only taking about 5 minutes.

Spinach Cheese Quiche Recipe
- 200g frozen shortcrust pastry
- 75g cream cheese
- 2 eggs
- salt and pepper
- 150ml milk
- 50g grated cheese
- 225g chopped spinach
First roll the pastry out until it fits the base of a 18-20cm flan dish.
Bake blind in and oven of 190c 375F (gas5) for 15 minutes.
After 15 minutes take the pastry case out and allow to cool.
Put the spinach into a pan of boiling water and cook for 5 minutes.
Drain the water and allow the chopped spinach to cool.
Beat the eggs in a bowl before mixing in the cream cheese, garlic, salt and pepper and milk.
Mix the spinach and cheese into the mixture
Pour the mixture into the cooked pastry case.
Cook in an oven 180c 350F (gas 4) for 25 minutes or until the quiche is firm to touch.
This spinach cheese quiche recipe can be enjoyed either hot or cold.
