Bananas and pasta are athletes' favourite food to enable them to keep up their strength on arduous training schedules.

Or maybe like me you are a veggie fan. With baby corn, carrots, asparagus and peppers what could be nicer than our Veggie Pasta recipe.

Whichever recipe you choose to make, you can rest assured as you donít need to be a super cook to achieve excellent results with our simple pasta recipes.

Pasta is cooked in boiling water taking only a few minutes. Follow the instructions on the packet as depending on what kind of pasta you use will depend on how long to cook it.

Simple Pasta Recipes

Fruit Pasta Recipe

  • 275g pasta
  • 4 pineapple rings
  • 45ml or 3tbls brown sugar
  • 60ml or 4tbls lime juice
  • 60ml or 4tbls coconut milk
  • 30ml or 2tbls fish sauce
  • 30ml or 2tbls grated root ginger
  • 2 garlic cloves
  • 2 nectarines
  • 1 mango
  • 1 banana
  • black pepper
  • 2 spring onions
  • 2 red chillies

Peel and chop the mango into small slices.
Chop the chillies into small pieces.
Chop the banana into small slices.
Slice the nectarines into small slices.

Cook the pasta in boiling water according to instructions on the packet.
Drain before running under a cold water tap and then set aside.

Take the pineapple rings and place them in an oven proof dish.
Sprinkle 2tbls of sugar over them.
Pop them under the grill for 5 minutes or until they are a nice golden brown colour.
Chop into small chunks and leave aside to cool.

In a bowl, mix the fish sauce with the coconut milk and lime juice.
Add the remaining 1tbls of brown sugar, plus garlic and ginger.
Mix it all together.

Mix the pasta, pineapple, mango, nectarines, banana, chillies and spring onions into the sauce.
Serve cold.

Simple Pasta Recipes

Veggie Pasta Recipe

  • 225g asparagus spears
  • 115g mange tout
  • 115g baby sweet corn
  • 225g baby carrots
  • 1 red pepper
  • 8 spring onions
  • 225g pasta
  • 150ml or 2/3 cup of low fat cottage cheese
  • 150ml 2/3 cup of natural yogurt
  • 15ml or 1tbls lemon juice
  • 15ml or 1tbls chopped parsley
  • 15ml or 1tbls chives
  • skimmed milk
  • salt and pepper

some nice fresh bread such as sun-dried tomato or garlic bread.

Chop the asparagus spears in halves - long ways.
Cook them in a pan of boiling water for 2 minutes.
Add the mange tout and cook for another 2 minutes.
Drain then rinse them under cold water before setting aside.

Cook the baby corn, carrots, red pepper and onions in boiling water for 5 minutes.
Drain and then rinse them under cold water before setting aside.

Cook the pasta according to instructions on packet.

In the blender, smoothe the cottage cheese, yogurt, lemon juice, parsley, chives and seasoning.
If the sauce is too thick add a little milk to thin it down, but not too much as you donít want the sauce too thin, but just so that it pours nicely.
Toss all the ingredients together in a large pan and heat gently before serving.
