Our recipe for glazed carrots turns a simple dish into something deliciously special.

Carrots are cheap and in abundance to buy at any time of year. They can be eaten raw or used in soups, cakes and stews.

The way I love to eat them is raw with a little sour cream. Carrot cake is another delicious way of using carrots.

Full of vitamin A which is used by the eye, in fact if you don’t get enough you can suffer from night blindness.

In the UK people ate loads of carrots during the war with the result they built a reputation for excellence when it came to spotting enemy planes in the dark!

Vitamin A is also good for your skin, especially good for improving skin tone and acne.

Carrots are high in carotenoids which are believed to help reduce cholesterol making them good for your heart.

They are full of antioxidants which help prevent damaged cells and ageing.

Quick and Easy

So if you are fed up with ordinary boiled carrots covered in a little butter, try this recipe out. Adding maple syrup or runny honey gives it a sweet taste which really complements the carrots.

For presentation reasons it's best to use small whole baby carrots, but if you can't find them just chop a few carrots up as they will taste just as nice!

Recipe for glazed carrots

Serves 4 people and accompanies a main dish
  • 450grms (16oz) of small washed baby carrots
  • 1 cup of olive oil
  • 1 cup of maple syrup or runny honey
  • salt and pepper to season
1. Boil the carrots in water until they are soft.

2. Drain the water from the carrots.

3. Pour the oil into a frying pan.

4. Pour the syrup or honey into the frying pan.

5. Fry the carrots for three or four minutes making sure the carrots are completely coated with the sauce, but don‘t burn.

6. Sprinkle with a little salt and pepper.

Serve and eat while hot, pouring remaining sauce in frying pan over them.

Our recipe for glazed carrots can be stored in the refrigerator, heated in the microwave and served when you are ready to eat.
