You can eat it hot on a winter's day or cold as a picnic dessert; both ways are equally enjoyable.

If you prefer not to make your own pastry then buy some from the supermarket frozen - it's much the easier way if you either don't have time or don't enjoy making pastry.

Pumpkins are winter squashes and I think they are really nice to look at in both shape and colour which is why I suppose at Halloween they make such good lanterns. But there is so much more to a pumpkin than making a lantern!

Pumpkins are very popular in America but are becoming more so in Europe too. Americans traditionally celebrate Thanksgiving with pumpkin pie but to be honest our recipe is much too nice to only eat once a year! Why not make it for birthdays, anniversaries, picnics or just any time you fancy it?

Because this recipe is aimed at the beginner as well as the experienced cook, instead of using fresh pumpkin, canned pumpkin is used. Really as long as you use frozen pastry there is nothing easier than this recipe - all you need to do is mix the ingredients together and pop it in the oven.

Pumpkin Pie Spice Recipe

Pre heat oven 190C 375F Gas 5

short crust pastry

  • 175g or 1 and half cups of flour
  • 75g or 6tbls of margarine

The Filling

  • 100g or 2/3 cups brown sugar
  • 1 and half teaspoons of cinnamon
  • half teaspoon of ground ginger
  • quater teaspoon of ground cloves
  • 1 and half pounds canned pureed pumpkin
  • 3 eggs
  • half pint of single or 1 and a quater cup of light cream
Line a 23cm pie tin with the short crust pastry.

Mix all the other ingredients together.

Pour into pie dish.

Bake in pre heated oven for 50 minutes.

Once cooked you should be able to insert a knife into the centre and it should be clean when it comes out.

This is lovely eaten either hot or cold.
