easy cabbage rolls recipes I have tried to be imaginative with these lettuce wraps recipes so that they are exciting. Our first lettuce wrap is a turkey stir fry, then we have one using rice and beans, and lastly a lettuce wrap using lots of vegetables.

All recipes have one thing in common : they are very healthy.

Lettuce wraps are just as easy to eat at lunch time as a sandwich is. If you are like me and you don’t like bread because it makes you feel sluggish, then a wrap - with perhaps some low fat crisps included - is an ideal alternative and sooooo much healthier than eating bread Try giving them to your children as you might be surprised just how much they enjoy them.

Our recipes are only suggestions, you can include anything in your lettuce wraps. Fresh vegetables are the best if you want clear healthy skin.

Our first Lettuce Wraps Recipe

Turkey Stir Fry

serves 4

You will need 8 large lettuce leaves
  • 1tbsp olive oil
  • 1 small onion
  • 4 large mushrooms
  • 1 small red pepper
  • small piece of root ginger
  • ½ mild curry powder
  • 300g turkey meat
  • 150g mange tout
  • 2tbls plain yogurt
  • salt and pepper to taste
1. Chop the onion, mushrooms and pepper into small pieces. Grate the root ginger.

2. In a frying pan, heat the olive oil then heat the mushrooms, onions, pepper with the grated ginger and curry powder and cook for 2-3 minutes until onions and mushrooms are soft.

3. Add the turkey to the frying pan and cook for about 7-8 minutes.

4. Now add the mange tout and cook for a further 2 minutes.

5. Scoop into a large lettuce leaf enough of the turkey stir fry to make the wrap.

6. Pour a little yogurt over the stir fry and sprinkle with salt and pepper to taste. Wrap the lettuce.

Our second Lettuce Wraps Recipe

Rice and Beans

serves 4

You will need 8 large lettuce leaves

suitable for vegetarians
  • 1tbls of olive oil
  • 25g light butter or margarine
  • 1 onion
  • 4 cups cooked brown rice
  • 225g sweet corn from a can
  • 80g can of red kidney beans
  • 60g can of chickpeas
  • 60g can of butter beans
  • ½ tsp dried herbs
  • 4 tomatoes
1. Chop the onion into small pieces.

2. Heat the olive oil and the butter in a frying pan.

3. Fry the onion until soft.

4. Add all the other ingredients and cook for 1-2 minutes until heated.

5. Scoop the mixture into large lettuce leaves and wrap the lettuce with the mixture inside.

Vegetable Medley serves 4

You will need 8 large lettuce leaves

suitable for vegetarians
  • 2 carrots
  • 2 courgettes
  • 4 handfuls of bean sprouts
  • 1 red pepper
  • 1 green pepper
  • 1 yellow pepper
  • 1 handful of mange tout
  • 2tbls of olive oil
  • 1 lemon
1. Slice the carrots and courgettes into small pieces.

2. Slice the peppers into strips.

3. Squeeze the juice out of the lemon.

4. Heat the oil in a frying pan and cook all the vegetables for at least 5 minutes.

5. Lastly add the lemon juice and cook for another 1 minute.

6. Scoop the mixture onto large lettuce leaves and wrap.
