Even with the thought of homemade apple pie recipes you can feel your mouth drooling. What after all could be nicer? It's not just the taste, it's the wonderful aromas that come from the kitchen while baking... mmmmmmm just scrumptious.

Apple pie was one of the first desserts, simply because apples are easily grown in abundance in your own garden. Once you have mastered the art of making pastry it's easy. When you have made your dough, pop it into the refrigerator for half an hour before rolling, this is the secret to success.

We have given you a choice of flaky pastry or short crust pastry: it's all a matter of taste. Some much prefer the lighter flaky, while others prefer the biscuit taste of the short crust pastry.

First Make Your Pastry

Flaky pastry for your homemade apple pie recipes
  • For a flaky pastry base
  • 200g plain flour
  • half teaspoon of salt
  • 75g lard
  • 75g margarine
  • 7 tablespoons of cold water
  • 1 teaspoon of lemon juice
Sift the flour and salt together into a bowl.
In another bowl mix the lard and margarine together.
Rub one half of the fat into the flour.
Add the water and lemon juice slowly bit by bit and mix to a dough using a fork.
Roll out on a floured surface to about 30x20cm.
Take a third of the remaining fat and dot over the pastry.
Fold the pastry over so that the fat is sandwiched.
Let the pastry rest in the refrigerator for half an hour.
Take the pastry out of the refrigerator and knead.
Now repeat the last steps twice again.
Roll out the pastry onto a floured surface and let it rest for half an hour before using.

Shortcrust Pastry for your homemade apple pie recipes

  • 200g plain flour
  • 100g margarine
  • pinch of salt
  • 3-5 teaspoon of cold water
Rub the margarine into the flour with your first two fingers and your thumb until it resembles bread crumbs.
Add some water a little at a time until the mixture forms a dough.

To Bake Blind
Line a 20cm flan dish with your pastry.
Now take a piece of greaseproof paper and line the pastry, making sure you go into all the curves.
Fill the pastry case with uncooked macaroni on top of the greaseproof paper.
Cook in a pre heated oven of 190C 375F gas 5 for 15 minutes, then remove the macaroni and paper and bake for a further 5 minutes.

Homemade Apple Pie Recipes - Fillings

Once your pie is ready, bake in pre heated oven 190C 375F gas 5 for 35 minutes

Apple Ginger Pie Filling

  • 595g cooking apples
  • 112g crystalized ginger
  • 85g sugar
  • 2-3 tablespoons of water
  • 1 lemon rind grated
Peel, core and slice apples into a pan.
Add sugar, chopped ginger, lemon rind and water.
Cover pan and cook on very low heat.
Add water to prevent sticking.
Cool before filing base pastry case.
Cover the filling with top pie pastry.
Make a slit or two in the pastry to allow steam to escape.

Blackberry and Apple Pie Filing

  • 400g cooking apples
  • 450g blackberries
  • juice of 1 lemon
  • sugar to taste
Peel, core and slice the apples.
Layer the blackberries and sliced apples in the pie pastry.
Sprinkle with lemon juice and sugar to taste
Cover the filling with pie pastry.
Make a slit or two in the pastry to allow steam to escape.
