Brighten up your sandwiches
Sandwiches can be very dull at times so why not brighten your lunch up by placing your sandwich in a basket with a brightly coloured napkin surrounded by tomatoes, cucumbers and lettuce with slices of peach and apple.
First on our menu for our healthy lunch recipes is soup.
Soup is easy to make and can be stored in the freezer until you are ready to eat it, making it a very quick lunch. It ticks all the healthy boxes, being low in fat and high in nutrition.
Tomato Soup Recipeserves 4-6 people
Gently cook the tomatoes, onion, carrots and sugar in the stock until tender.
- 450g peeled tomatoes
- 1 chopped onion
- 2 chopped carrots
- 1tsp sugar
- 450ml chicken stock
- salt and pepper
- 150ml low fat milk
- 150ml low fat thick cream
Pour into a blender and blend until smooth.
Return to the pan and add the milk and cream.
Heat but do not boil or the milk will curdle.
Season with salt and pepper
Serve with hot bread.
Healthy Lunch Recipes
Baked Potato with Sweet FillingA baked potato is ideal at lunch time and is so quick to make in the microwave.
Bake the potatoes in a micro for about 15 minutes or until soft.
- 1 baked potato
- 1 red pepper
- 1 celery stick
- 1 apple
- cheddar cheese cut into cubes
- 2tbls low fat mayonnaise
Chop the vegetables into small pieces before mixing with enough cubed cheddar cheese for your taste.
Mix with mayonnaise and fill the inside of the cooked potatoes.
Healthy Lunch RecipesMost people think of breakfast when they think of scrambled eggs but hey you can make your own rules up! Eggs are so full of protein and a great combination with onions and tomatoes.
Beat the eggs with the milk, and add salt and pepper.
- 3 eggs
- 2 tbls low fat milk
- salt and pepper to taste
- 25g low fat margarine
- ½ onion chopped
- 1 tomato chopped
- 2 slices of toast
Melt the butter in a frying pan and gently heat.
Fry the onion until golden brown.
Pour the egg into the pan and heat slowly scraping the bottom of the pan all the time until it scrambles.
Once it starts to scramble, add the chopped tomato.
Place the scrambled eggs over the toast and serve immediately.
Healthy Lunch Recipes
Tuna Salad with Pastaserves 2
Cook the pasta according to instructions.
- 125g pasta shells
- 50g button mushrooms
- ½ green pepper chopped
- 2 tomatoes
- 1 can tuna
- parmesan cheese
Chop the green pepper and tomatoes.
Add the tuna, pepper, tomatoes and mushroom to the pasta, making sure they are well mixed in.
Sprinkle with parmesan cheese.
