Carrot cake is a great favourite with adults and children alike, although I wouldn't mention the word carrot to any child as this might put them off! A piece of carrot cake is a tasty treat along with a cup of tea or coffee or even served as a dessert along with ice cream or framage frais.

Carrots provide us with retinol which help us see in the dark. Yes, there is a grain of truth in this old myth. The British during the war were especially good at spotting night time flyers because of the abundance of carrots they were eating at the time. Carrots today are still useful for scuba divers, early morning runners or anyone working in poor light.

Prepare for your healthy carrot cake recipe

Before you start cooking, line a cake tin with greaseproof paper.
To do this take a cake tin about 20cm in diameter and sit it on top of the the greaseproof paper.
Now take a pencil and draw round the tin.
Take some scissors and cut the shape just inside the line.
Take a little butter and grease the inside of the cake tin.
You can now line the bottom of your cake tin with the cut out.

Carrot Cake Tip

Sprinkle the brown sugar over the topping just before serving as it may dissolve.

Pre heat the oven to 190c (375f) (gas 5)

Ingredients
  • 75g wholemeal flour
  • half tsp baking powder
  • half tsp ground ginger
  • 1 tsp ground allspice
  • 2 grated carrots
  • 75g soft brown sugar
  • 50g sultanas
  • 2 beaten eggs
  • 1tbls orange juice
  • 75g light soft margarine
Method
Sieve the flour, baking powder, ginger, and allspice into a bowl.
Mix the sugar and sultanas and carrots into the bowl with the flour mix.
Add your beaten eggs, orange juice and margarine, beat with an electric hand whisk for a minute until well mixed in.
Pour the mixture into a cake tin and pop into the oven for 20-25 minutes.
Allow to cool before topping.

The Topping for healthy carrot cake recipe

Ingredients
  • 150g light cream cheese
  • 2tbls of orange juice
  • A little soft, brown sugar to decorate
Method
In a bowl mix the cream cheese and 2 tablespoons of orange juice.
Spread over the cooled cake and sprinkle with a little brown sugar. Now sit back, relax and wait for the compliments which will come from your family and friends about your great healthy carrot cake recipe.
