We have put together some healthy appetizer recipes such as vegetable rolls for a dinner party or just a nibble before a meal, making the most of fruit and vegetables.

Sometimes it's difficult to think of something new to start a meal with when you have a few friends round for dinner. The last thing you want to do is have exactly the same appetizer as you did the last time the same friends came to your home.

On this page you can find a recipe for vegetable rolls. By making them small enough so they just take the edge off your appetite, they are perfect - and what’s more, a healthy alternative start to any meal. If children are in amongst your dinner guests then this is an excellent choice - as vegetable rolls are enjoyed by all ages. These rolls are great finger foods which are ideal for a snack - or why not pack them for a picnic?

Healthy Appetizer Recipes

Ham, Melon and Asparagus

  • 225g asparagus spears
  • 1 small Galia melon
  • 55g thinly sliced ham (parma is ideal)
  • 150g mixed salad leaves

The dressing

  • 1tbls of balsamic vinegar
  • 2tbls of raspberry vinegar
  • 2tbls orange juice

Method

Cut the asparagus in half. Boil in salted water for 5 minutes. Once cooked, drain and run under cold water tap.

Cut the melon into small slices and then cut away the skin. Wrap a piece of ham round each melon slice.

Arrange the salad on serving plates. Arrange the asparagus over the salad. Place a piece of melon and ham on top.

In a salad bottle, mix the ingredients for the dressing and shake. Drizzle the dressing over everything.

Vegetable Rolls

  • 25g rice vermicelli noodles
  • olive oil for frying
  • 1tsp grated ginger
  • 2 spring onions
  • 50g grated carrot
  • 50g shredded mange touts
  • 25g spinach leaves
  • 50g bean sprouts
  • 1tsp chopped coriander
  • 1tbls chopped mint
  • 2tbls Thai fish sauce
  • 20-25 spring roll wrappers
  • 1 egg white

Dressing

  • 4tbls of sugar
  • 50ml or ¼ cup rice vinegar
  • 2 red chopped chillies which are seeded

Method - healthy appetizer recipes

Make the dressing first so that it has enough time to cool before serving.

In a pan with 2tbls of water, add the sugar and vinegar.
Heat gently until all the sugar has dissolved.
Boil stirring all the time until the liquid is syrupy.
Add the chillies.
Leave to cool.

Cut the noodles into short strips and cook according to instructions.

Heat a wok.
Add about 1tbls of olive oil.
Cook the ginger and spring onions first for about 20 seconds.
Add the carrot and mange touts and cook for 3 minutes.
Add the spinach, bean sprouts, mint and coriander and fish sauce and cook for another minute.
Finally add the cooked noodles and set aside.

Taking a spring roll wrapper, lay it out so that its diamond shape is in front of you.
Spoon a little of the vegetables onto the centre of the wrapper.
Take the corner nearest you and fold it over.
Now take the corner furtherest away from you and fold it over onto the vegetables.
Fold both of the sides over to make the roll.
Brush the egg white over each roll.

Taking the cleaned wok and a little oil for frying, cook the vegetable rolls until they are golden brown.
Drain on kitchen paper and serve.
