Easy pasta recipes are just the thing you are looking for if you are in a hurry or just can't be bothered cooking when you come home from work. Pasta is anything but boring and full of nutrients and what’s more it makes a very cheap meal. There is nothing better and more satisfying than cooking easy pasta dishes which kids and adults alike just love. There is nothing more simple than pasta.

Pasta is made from flour, egg and water.
Paste verde has spinach running through it.
Wholewheat pasta is of course made from wholewheat.

Pasta comes in all shapes and sizes depending on what you are using it for. You can buy shells, spirals, spaghetti, bows, animal shapes, alphabet shapes, the list goes on and on.

You just cant beat a summer pasta salad for super on warm long summers night evening.

To cook your easy pasta dishes

Serves 4
  • You will need 4pints of water
  • 1/2tbls of salt (optional)
  • 225g pasta (50g per person)
Spaghetti takes about 8-10 minutes to cook.
Tagliatelle takes about 10-12 minutes to cook.
Small pasta takes about 5 minutes to cook.

Take a large pan and fill it with the salted water.
Bring the water to the boil.
Add the pasta a little at a time so the water does not cool.
When all the pasta is in the pan reduce the heat so that the water is bubbling, but no more.
Leave to cook until it is soft, but no more.
Pasta should always have a bite to it and should not be cooked soft and mushy.
Drain the pasta in a sieve.

Vegetable Lasagne

Lasagne is everybody's favourite and especially handy if you are feeding a few hungry people.

This lasagne is suitable for vegetarians.

Serves 6

Pre heat oven 190C 375F Gas 5
  • 445g carrots
  • 1tbls olive oil
  • 455g onions
  • 250g mushrooms
  • 1 red pepper
  • 400g can of tomatoes
  • 2tbls tomato puree
  • 2tsp dried mixed herbs
  • 1tsp garlic puree
  • 2 packets of cheese sauce
  • 600ml or 1 pint of low fat milk
  • 375g pack of lasagne
  • 30g parmesan grated cheese
  • 115g grated cheddar cheese
  • salt and pepper to taste
Chop the carrots, onions, red pepper and mushrooms into small pieces.
Boil the carrots and, when cooked, mash them.

In a frying pan, cook the onions, mushrooms and red pepper until soft.
Add the carrots and the can of tomatoes to the frying pan along with the tomatoes and garlic puree and herbs. Cook gently for about 20 minutes.

Make the cheese sauce up with the milk.

Layer some of the vegetable mix into a baking dish.
Place a layer of lasagne sheets over the vegetable layer.
Pour some cheese sauce onto the lasagne layer.
Continue layering until all the ingredients are finished.

Sprinkle parmesan and cheddar cheese over the top.
Put into the oven and bake for 30 minutes.
Allow to rest after cooking for 5 minutes.

Pasta Bake

This is one of those easy pasta dishes that you can make when you have friends round and want to join in on the chat rather than being stuck in the kitchen.

Great for dieters being low in fat and ideal for vegetarians.
  • 350g dried pasta
  • 2 400g cans of tomatoes
  • 2 vegetable stock cubes
  • 3 peppers - red - yellow- green
  • 1 onion
  • 1tsp dried oregano
  • 85g button mushrooms
  • 2tbls tomato puree
  • 6 cherry tomatoes
  • 1tsp cornflour
  • 85g low fat cheese
  • chopped fresh parsley
  • salt and pepper to taste
Cook the pasta
Pre heat the grill.

Put the canned tomatoes into a large pan and add the stock cubes, pepper, onions, oregano and garlic and cook for about 5 minutes.
Add the mushrooms, tomato puree and cherry tomatoes to the pan and cook for another 5 minutes.

Mix the cornflour with a little water to form a paste and add to the pan.
Add a little salt and pepper to taste.
Stir the pan until the sauce thickens.

Mix the sauce with the pasta and put into an oven proof dish.
Sprinkle the grated cheese over the top and brown under the grill.

Serve garnished with fresh parsley.
