Because so many of us nowadays lead a hectic lifestyle, its important to remember that maintaining a balanced diet is important. Without the right kind of foods our bodies just don’t function to their full capacity. We are not unlike an engine which is looked after well with plenty of fuel. But even an engine can't run if given the wrong fuel - and our bodies are no different.

Feeding your body lots of fruit and vegetables every day gives it a head start. You will not only feel better, you will feel energized and look healthier.

Our easy healthy meal collection will help you achieve this.

There is nothing better for you than eating raw fruit and veg as you are getting the full blast of the vitamins and minerals included; however variety is the spice of life so go ahead and add your five-a-day to all your cooking and don’t feel guilty. Eating your fruit and vegetables should be something you enjoy not something you endure.

Easy Healthy Meal: Breakfast

Start the day with a smoothie. Easy, quick and so deliciously full of energy to kick start your day.

Serves 2
  • 2tbls frozen bananas
  • 1 cup frozen raspberries
  • 2tbls of porridge oats
  • 2tbls of natural yogurt
  • 300ml or ½ pint of apple juice
Put all the ingredients into a blender and blitz until the mixture is smooth. Serve immediately.

Veggie Omelette

Serves 4
  • 4tbls olive oil
  • 1 onion
  • 1 garlic clove
  • 1 aubergine
  • 2 courgettes
  • 2 tomatoes
  • 6 eggs
  • ½ tsp dried oregano
Slice the onion, aubergine, courgettes and tomatoes into small pieces.

Pour the olive oil into the frying pan and fry the onions until they are soft.

Add the garlic, aubergine, courgettes and tomatoes to the frying pan and cook until the vegetables are soft - about 8 minutes.

Beat the eggs together with the oregano and add to the vegetables.

Cook for a further 5-8 minutes until the egg is browning on the bottom and starting to set a little on top.

Cut the omelette into portions and serve.

Easy Healthy Meal : Lunch

Serves 4

Feta Cheese Salad

  • 100g lettuce leaves
  • 12 fresh coriander leaves
  • 10 cherry tomatoes
  • 100g pitted black olives
  • 1 small red pepper (sliced)
  • 200g pack feta cheese

The dressing

  • 2tsp red wine vinegar
  • 3tbsp extra virgin olive oil
  • salt and pepper
  • 1tsp of fresh parsley chopped
  • ¼ mustard
Shred the lettuce into small pieces.

Cut the cheese into small cubes.

Slice the red pepper into small pieces.

Put the lettuce, cheese, coriander, tomatoes, black olives, red pepper and cheese into a salad bowl.

For the dressing

Put all the ingredients for the dressing into a salad bottle with a screw top.

Shake the mixture before drizzling over the salad.

Serve immediately with salt and pepper (optional) or chill in the refrigerator.

Carrot Triple Decker

Serves 1
  • 4tbsp of low fat soft cheese
  • 30g grated carrot
  • cress
  • 3 slices wholemeal bread
Spread 2tbsp of low fat soft cheese over one half of bread and top with grated carrot.

Put the second piece of bread on top of the first.

Spread the top of the second half of bread with soft cheese and top with the cress.

Place the last piece of bread on top.

Cut into four triangular pieces to serve.

Easy Healthy Meals : Dinner

Turkey and Veg Stir Fry

  • 1tbls olive oil
  • 1 onion
  • 4 large mushrooms
  • 1 red pepper
  • small piece root ginger
  • ½ tsp curry powder
  • 300g turkey meat (strips)
  • 150g mangetout
  • 2tbls plain yogurt
  • salt and pepper
method for turkey and veg stir fry
Fry the onion, mushroom, red pepper, grated ginger with the curry powder in a wok with the olive oil.

Cook the vegetables until they are soft - for about 2 minutes.

Add the turkey strips and cook for another 5 minutes.

Lastly add the mange tout and cook for another minute.

Serve onto plates and drizzle the plain yogurt over each serving.

Add salt and pepper to the finished turkey and veg stir fry to taste.

Lemon Cod

  • 3tbls olive oil
  • juice of 1 lemon
  • 4 skinned cod fillets
  • 1 onion
  • 250g fresh spinach
  • 1tsp of dried chilli flakes
  • 420g chickpeas
Mix 1tbls of oil and a little lemon juice together (leave a little juice to drizzle over the cooked fish).

Brush this oil over the fish and season with salt and pepper.

Line a roasting tin with foil and pre heat the grill.

Grill the fish under the grill for about 5 minutes.

Turn the fish over and give it another 5 minutes.

Take the rest of the olive oil and fry the onion until soft and golden in colour.

Add the spinach and cook until it is soft.

Add the chilli flakes and chickpeas and cook for another minute.

Spoon the mixture onto plates and place the fish on top.

Drizzle any remaining lemon juice over the fish.
