When you think of a coconut, do you think of a tropical paradise with white sandy beaches and palm trees blowing gently in the wind? Most likely those palm trees are coconut palms. The coconut has been around since Egyptian times.

Beauty
Did you know that coconut oil makes an excellent soap, can be used as a skin moisturiser and as hair conditioner.

Carpet, rope and furniture
The husk of the coconut can be made into carpets, rope, and furniture.

Diesel
One of the more unusual uses is an alternative to diesel in cars, although this is not one I would recommend, especially if you have a fairly new car.

Substitute
Many people are lactose intolerant and coconut milk can make an excellent substitute which you can add to cooking or simply drink.

Coconut milk
Coconut milk can be made by taking 1 cup of grated coconut and putting it into the blender with 1 cup of boiling water. Blend until smooth then allow to cool. 1 coconut will give you about 5 cups of grated coconut.

Coconut Cookie Recipes

Coconut Cornflake Cookie

Bakes about 25 cookies

Preheat oven 170C 325F Gas 3

You will need:

2 baking sheet
  • 150g or 2/3 cup soft butter or margarine
  • 1 egg
  • 3 drops vanilla essence
  • 115g or Ĺ cup soft brown sugar
  • 85g or 1 cup desiccated coconut
  • 55g or 2/3 cup rolled oats
  • 115g or 1 cup self raising flour
  • 55g or 2 cups crushed cornflakes
Method
In a bowl, mix the margarine, egg, vanilla essence and sugar until the mixture is nice and creamy looking.
Add the coconut, flour and rolled oats and mix until it forms a dough.
Using your hands and fingers roll out 25 balls from the dough. They should be about the size of a plum.
Place your crushed cornflakes in a bowl.
Take one ball at a time and roll it in the crushed cornflakes so that it is completely covered.
Flatten to form cookie shape.
Place on a greased baking sheet and bake for 15 minutes.

Coconut Cookie Recipes

Coconut Oat Cookie

Pre heat oven 350F

You will need:

baking sheet
  • 1 cup coconut or olive oil
  • 1 cup soft brown sugar
  • 1 cup of white sugar
  • Ĺ tsp vanilla essence
  • 1 ľ cups white flour
  • 1 tsp baking soda
  • Ĺ tsp salt
  • 3 cups rolled oats
  • Ĺ cup grated coconut
Method
In a bowl mix the oil, vanilla essence and the sugar together.
In another bowl mix the flour, baking soda and salt.
Add slowly the oil mixture to the flour mixture.
Add the oats and coconut and mix well.
Place ,on a greased baking sheet, a spoonful of cookie mixture until you have about 12 cookies.
Bake for about 10 minutes or until golden brown.
