Christmas is a time for over-indulgence which means that you can eat desserts that you might otherwise not look at. Christmas in Scotland where I live just wouldn't be the same without Christmas mince pies. Even although they are called Christmas mince pies there is no meat involved, only fruit and spices. If you have never tried one, then please make our recipe and discover what you have been missing.

christmas mince pies It's traditional in my house to have a trifle along with the Christmas pudding for dinner. My mum is soooo good at trifles she has a bit of a reputation for being a trifle expert and our family all look forward to them as a special treat.

There are many Christmas dessert ideas people think about which are unusual but one which is at the forefront in most people's minds is the Christmas pudding. I love the taste of Christmas pudding but I love the theatrical bit of making a little dip in the top of the pudding and pouring brandy into it before setting it alight - the perfect finish to Christmas dinner.

Some Christmas dessert ideas to think about are Raspberry Crunch and Meringue Mango. Both are a delicous change from the traditional desserts you associate with Christmas.

Raspberry Crunch

4 tall dessert glasses
  • 75g trifle biscuits
  • 1 piece of stem ginger in syrup
  • 250g tub of cream cheese
  • 4tbls soured cream
  • 142 ml of single cream
  • 350g raspberries (they can be de-frosted)
1. Crush the trifle biscuits into small pieces.
2. Cut the stem ginger into tiny bits.
3. Mix the cream cheese and the soured cream together.
4. Now mix the single cream into the creamed cheese and sour cream with the stem ginger and trifle biscuits.
5. Put aside 12 raspberries.
6. Equally spread the rest of the raspberries between the four glasses.
7. Divide and spread equally the cream and cheese mix.
8. Top with the the 12 raspberries you put aside earlier.

Serve immediately

Meringue Mango

  • 1 large mango
  • 125g of low fat soft cheese
  • 30g icing sugar
  • 2 meringue nests
  • 200ml carton of half fat creme fraiche
1. Peel and stone the mango.
2. Slice the mango, reserving 4 small pieces for decoration.
3. Put the rest of the mango into the blender and blend until smooth.
4. Crumble the meringue nests.
5. Mix the soft cheese and creme fraiche together.
6. In four dessert glasses equally layer the mango juice, the meringue and the cream/cheese.
7. Decorate with a piece of mango.

Serve immediately.

Christmas Mince Pies

200C 400F Gas 6

You will require

cup cake baking tray of 12
  • 180g plain flour
  • pinch of salt
  • 6tbls soft margarine
  • 120g mincemeat
  • 1 egg yolk
  • 1tbls skimmed milk
  • 3tsp icing sugar
1. Sift the flour and salt together.
2. Rub in the margarine - it should resemble bread crumbs.
3. Add a little cold water to make a firm dough.
4. Knead the dough then place in the fridge for 30 minutes.
5. Once the dough is chilled roll it out and cut 24 pieces out with a cookie cutter.
6. Place 12 of the cut pieces into a cup cake baking tray and fill each one with a spoon of mincemeat.
7. Now top the mincemeat with the cookie shaped dough.
8. Mix the egg yolk with the milk and brush the tops.
9. Bake the Christmas mince pies in the oven for about 20 minutes or until golden brown.

Serve hot with custard/cream.
