caesar salad recipes When we eat out I love to order one of the Caesar salad recipes on the menu.

I love the crunchy texture of the lettuce and croutons with the softer texture of the chicken, all mixed with a delicious dressing.

A Caesar salad is made with romain or (cos) lettuce, considered one of the best lettuces as it has a nutty taste and came originally from the Greek island Kos in Roman times.

A Caesar salad is perfect for eating outside on a summer's day but just as delicious used as a starter dish on a cold winter's night.

There are many differnt caesar salad dressing we are only showing you two here.

How to prepare lettuce

Pull the stalks apart and remove any leaves which look wilted.
Wash the leaves under a running cold water tap.
Place the wet leaves on a clean dry cloth.
Wrap the leaves in the cloth.
Place the cloth with the lettuce wrapped inside into the refrigerator.
Chill in the refrigerator for about 1 hour.

What you will need for your basic Caesar salad recipes.

Serves 4
  • 1 romain lettuce
  • 8 chopped anchovies
  • 40g shavings of parmesan cheese
  • croutons
  • 1 crushed garlic clove
  • 4-5tbls olive oil
  • 75 g stale white bread cut into cubes.
  • 2 egg yolks
  • 1½ tbls mustard
  • ½ cup of olive oil
  • 1tbls of white wine vinegar
  • sprinkle of salt to taste
First make your croutons

Place the garlic and olive oil into a bowl and leave for one hour to allow garlic to infuse the oil. If you want a really strong garlic taste leave overnight.
Strain the olive oil and pour into a frying pan.
Fry the cubed bread in the oil until golden brown.
Drain on kitchen paper towel.
Now make your dressing.
Pour all ingredients into a salad bottle with a cap top. Shake until well mixed.

Prepare to serve your Caesar Salad Recipes

In a salad bowl toss the lettuce leaves with the anchovies and croutons.
Pour the salad dressing over the ingredients.
Sprinkle the parmesan shavings over the salad and serve.

Chicken Caesar Salad

Serves 4 Pre heat oven 350F for the croutons
  • 4 slices of French bread
  • vegetable cooking spray
for the chicken
  • ½ teaspoon garlic powder
  • vegetable oil spray
  • 4 slices of breast of chicken
for the dressing
  • 1/3 cup lemon juice
  • ¼ cup red wine vinegar
  • 1tbls olive oil
  • 1teaspoon anchovy paste
  • ¼ teaspoon pepper
  • 8 -10 romaine lettuce leaves
  • ¼ cup grated parmesan cheese
Make the croutons. Cut the French bread into cubes and place on a baking tray.
Spray the bread cubes with vegetable oil.
Bake in the oven for about 15 minutes.
They should be golden brown; if not leave a little longer.

Slice the chicken breast into small cubed pieces.
Toss the cubed chicken in the garlic powder.
Cook in vegetable oil until soft and tender.

The Dressing In a salad bottle pour the lemon juice, vinegar, olive oil, anchovy paste, garlic powder and pepper.
Shake the bottle until all the ingredients have mixed.

Prepare to serve. Place the lettuce leaves in a salad bowl with the chicken pieces and croutons.
Drizzle the dressing over the salad.
Toss the salad before sprinkling the parmesan cheese over the top.
