broccoli salad recipe A broccoli side dish is so tasty and we are offering two for you : one which is hot and can be served alongside chicken, steak or fish, the other a cold dish which is nice served with cold meat, pizza or quiche.

The cold broccoli dish is ideal with our spinach cheese quiche or a simple baked potato.

The hot dish can be served on its own or with some roasted potatoes, cabbage rolls, pasta or French fries.

Some kids hate broccoli which is where our recipes can help. By dressing this vegetable up a bit with other tastes and textures, children will often enjoy their greens.

Health Benefits

Broccoli has loads of vitamin C which is ideal for anyone who is worried about being anaemic as it aids iron absorption. Of course, as most know, vitamin C helps fight the common cold in winter which is why it's good to eat up your greens!

Broccoli also includes folic acid which is so important to women during pregnancy as it helps the normal growth of tissue.

Potassium is also found in broccoli, as it can help lower high blood pressure.

Lastly broccoli is high in fibre and can help relieve constipation.

Buying Broccoli

Buy broccoli which is loose rather than wrapped in plastic because they tend to be fresher and it's easier to check if they are deteriorating.

Cooking Broccoli

Broccoli doesn’t require a lot of cooking. Break it into small florets and place in boiling water for about 5 minutes. They should be tender but not soft.

Broccoli is delicious served hot with butter and a little lemon juice.

The next time you make a stir fry, add a few florets of broccoli to add a crunchy texture, fibre and colour.

Cold broccoli side dish

  • 1/3 cup of mayonnaise
  • ¼ cup natural yogurt
  • 3 tbls of sugar
  • 1 tbls of white vinegar
  • 1 broccoli
  • 3 cooked bacon slices
  • 1/3 cup chopped onion
  • 1/3 cup grated cheddar cheese
  • ¼ cup of raisins
  • ¼ tsp black pepper
Break the broccoli into small florets.

Mix all the ingredients together.

Leave in the refrigerator to chill for at least one hour before serving.

Hot broccoli side dish

  • 1 small head of green broccoli
  • 4 baby courgettes
  • 1 small head of cauliflower
  • 1tbls of extra virgin
  • 1tsp freshly grated root ginger
  • 25g low fat margarine
  • 1tsp chopped fresh mint
  • salt and pepper to season
Cut the broccoli and cauliflower into small florets.

Slice the courgettes.

Cook the vegetables in boiling water or if you prefer use a steamer, cook until they are soft.

Pour the olive oil into a frying pan.

Add the ginger and cook for 2 minutes.

Add the margarine, vegetables, mint, salt and pepper to the frying pan.

Cook for a further minute making sure the vegetables are covered in the ginger.
