The Best Scalloped Potatoes Recipemade with Greek Feta Cheese
Pre heat oven 200C 400F gas 6
Oven proof rectangle dish 1.5 litre/ 6 1/4 cup
- 900g potatoes
- 150ml olive oil
- 1 fresh rosemary sprig
- 275g Greek feta cheese
- 115g or 1 cup pitted black and green olives
- 300ml or 1 1/4 cups vegetable stock
- salt and pepper to taste
1. Roughly chop the rosemary into smaller pieces.
2. Crumble the cheese into smaller pieces.
3. Wash the potatoes but don't peel them.
4. Put the potatoes into boiling water and cook for 15 minutes.
5. Take them off the heat and drain before allowing to cool.
6. When the potatoes have cooled, peel them and cut into thin slices.
7. Grease the oven proof dish with a little of the olive oil.
8. Now put the potatoes into the dish in layers.
9. With each layer add a little rosemary, cheese and olives.
10.Drizzle each layer with a little of the olive oil, and season with salt and pepper.
11.With your potatoes in layers and sandwiched with the other ingredients, cover the dish with foil or a lid.
12.Bake in the oven for about 35 minutes.
